Classic Standing Prime Rib Roast Recipe
Prime rib is a great centerpiece for any occasion but we especially love this recipe during the holidays! Check out our take on the classic prime rib roast below.
Ingredients:
- 8lb Standing Prime Rib Roast Trimmed and Tied
- 1 cup Kosher Salt
- ½ cup Coarse Ground Black Pepper
- Or 1 cup Valley Farm Market Signature Meat Candy All Purpose Rub
Equipment:
- Heavy Duty Metal Roasting Pan With Rack
- Internal Probe Thermometer
Instructions:
- Take the Prime Rib Roast out of the refrigerator 1 hour before you plan to cook it
- Preheat oven to 325 degrees
- Coat Rib Roast with olive oil and season generously covering all surfaces with salt and pepper or Meat Candy
- Place Rib Roast bone side down in roasting pan and cook for:
- Rare 18 minutes per pound
- Medium Rare 20 minutes per pound
- Medium 22 minutes per pound
- Allow Roast to rest for a minimum of 20 minutes before carving
VFM Pro-Tip – if your Prime Rib Roast is less than 10 pounds cook for 15 minutes per pound, if it is over 10 pounds cook it for 18 minutes per pound. No two ovens are the same so the safest bet for a perfect roast is to use an accurate internal probe thermometer. The Roast will continue to cook as the juices settle, raising the internal temperature an additional 15-20 degrees after you remove the roast from the oven.
