Italian Sausage & Peppers Pasta
A colorful pasta dish bursting with flavors of Italy. Zesty Italian sausage, sweet bell peppers, and al dente penne are tossed in a rich marinara sauce and topped with Parmesan cheese.

Ingredients
- 1 lb Italian sausage, casings removed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 lb penne pasta
- 2 cups marinara sauce
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions

Bring a large pot of salted water to boil for the pasta.

Heat olive oil in a large skillet over medium heat. Add sausage and cook, breaking it up with a wooden spoon, until browned (about 5-7 minutes).

Add sliced peppers and onions to the skillet. Cook until vegetables are softened, about 5 minutes.

Add minced garlic and cook for another minute until fragrant.

Pour in marinara sauce and simmer for 10 minutes.

Meanwhile, cook penne pasta according to package instructions. Drain, reserving 1/2 cup of pasta water.

Add cooked pasta to the skillet with sausage and peppers. Toss to combine, adding reserved pasta water if needed to loosen the sauce.
